I made this for breakfast Thanksgiving morning. Everyone loved it.

Ingredients For bacon frittata-kl

    lg eggs
  • 6 slice
    bacon
  • 1
    onion, chopped
  • 10
    potatoes, new red
  • 1 c
    cheese, shredded
  • 1 Tbsp
    shortening
  • 1 tsp
    chili powder
  • 1 tsp
    seasoning salt

How To Make bacon frittata-kl

    Add potatoes and a dash of salt to 4 qts water and heat to boiling. Cover and cook until potatoes skins split, about 20 min. Drain and set aside to cool.

    Preheat oven to 375 F.

    Rub shortening on sides and bottom of 13x9 pan.

    Chop onion.

    Cut bacon into small pieces.
  • 6
    Cook bacon until crisp. Remove and set aside.

    Cook onion in bacon grease until soft. Remove and set aside.

    Chop potatoes into small chunks or shred.

    Place in bottom of a 13x9 pan.

    Sprinkle 3/4 of the bacon on top of the potatoes.

    Beat eggs with the chili powder and seasoning salt. Pour over potatoes and bacon, mixing to coat.

    Sprinkle with the cheese and top with the remaining bacon.

    Bake for 35 minutes or until eggs are done and cheese is bubbly.
