I have made this for years to share with friends, coworkers or even a treat for the fire station. It's nice because it makes to beautiful loaves. I sometimes use lemon juice and zest in place of orange and walnuts in place of pecans. This is a very adaptable recipe.

Ingredients For super banana bread

  • 1 pkg
    reduced-fat cream cheese
  • 1/2 c
    butter, softened
  • 1 1/2 c
    sugar
  • 2
    eggs
  • 1 1/2 c
    mashed ripe bananas aprox 3 medium
  • 1/2 tsp
    vanilla extract
  • 3 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    pecans, seperated
  • GLAZE
  • 1 c
    confectioners' sugar
  • 3 Tbsp
    orange juice
  • 1 tsp
    orange zest

How To Make super banana bread

    In a large bowl with mixer paddle beat cream cheese,butter and sugar untill blended. Add eggs one at a time beating well after each. Add bananas and vanilla, beat until creamy. Combine flour, b.powder, b.soda and salt: gradually add to creamed mixture juste untill moist. Fold in 1/2 c. nuts.

    Transfer into two 8x4 in. loaf pans coated with cooking spray. Cover with remaining nuts. Bake for 55-60 min at 350 until a knife comes out clean.

    In a small bouwl, mix the glaze ingredients: drizzle over loaves. Cool for 10-15 min. before removing from pans to wire tack to cool. Makes 2 loaves (10-12 slices each)
