I like to serve this with the Breakfast Pie. They are both prepared the night before, covered and refrigerated and baked the next morning.

Ingredients For save-a-day coffeecake

  • 1/2 c
    special k cereal
  • 1/4 c
    chopped nuts
  • 1/4 c
    brown sugar--firmly packed
  • 1/4 tsp
    ground cinnamon
  • 1 Tbsp
    margarine or butter--softened
  • 1 -1/2 c
    special k cereal
  • 1 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/2 tsp
    ground cinnamon
  • 1/2 c
    sugar
  • 1/2 c
    buttermilk
  • 1/3 c
    shortening
  • 1
    egg

How To Make save-a-day coffeecake

    Combine first 5 ingredients in small bowl, mixing until crumbly. Cover tightly and store overnight for topping.

    Stir together the 1-1/2 cups cereal, flour, baking powder, soda, salt, cinnamon and sugar in large mixing bowl. Add buttermilk, shortening and egg. Beat until well combined. Spread batter evenly in greased 9x9x2 baking pan. Cover tightly. Refrigerate overnight.

    Morning--Remove pan from refrigerator. Uncover and sprinkle topping over batter. (first 5 Ingredients)

    Bake in oven at 350* about 25 min. or until tests done. Cool 5 min. before serving
