I am not sure where Mom got this recipe, but we could never get her to make it enough. Also, not sure why she lined the baking pans with waxed paper, but why change it now?

Ingredients For mom's coffee cake

2 1/2 call purpose flour

1/2 tspsalt

2 cbrown sugar, firmly packed

2/3 cshortening
-
2 tspbaking powder
-
1/2 tspbaking soda

1/2 tspcinnamon
-
1/2 tspnutmeg
-
1 1/8 csour milk or buttermilk

2egss, beaten
How To Make mom's coffee cake

1Mix flour, salt, brown sugar and shortening with pastry cutter or 2 knives until crumbly. Reserve 1/2 cup for topping.

2Add baking powder, soda and spices to remaining mixture. Add milk and eggs; mix well. Pour into 2 waxed paper lined 8x8 baking pans; Sprinkle with reserved crumbs;

3Chopped pecans and extra cinnamon can be sprinkled if you want extra flavor boost. Bake at 375 for 25 to 30 minutes.
