This is my grandmother's recipe. Even my husband, who can't stand vegetables adores this bread. It's extremely moist and tastes wonderful grilled on a griddle.

Ingredients For janet's zucchini bread

  • 3
    eggs
  • 1 c
    oil
  • 2 c
    sugar
  • 1 Tbsp
    vanilla extract
  • 1 tsp
    salt
  • 3 c
    flour
  • 1 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1 1/2 c
    raisins
  • 3 c
    raw shredded zucchini

How To Make janet's zucchini bread

  • 1
    Mix all ingredients together with the exception of the Zucchini. Add zucchini once everything else is incorporated completely otherwise it will release too much juice.

    Pour batter into two greased loaf pans.

    Bake at 350 for one hour.
