This recipe is what my brother, Forest, makes as Christmas gifts for people every year. My brother loves to feed people, and people love it when he does! He took a plain pumpkin bread recipe and turned it into a happy fruit cake. All his friends and family love to receive his bread as a gift. It is good when frozen for about a month and then thawed. It does something to the bread, and it comes out moist and delicious. He makes them in November for December gift-giving. Enjoy!!

This pumpkin bread recipe is unlike other recipes we've had before. Filled with warm spices and a rich, moist, poundcake-like texture, we loved the add-ins reminiscent of fruit cake. Dried cranberries, dates, raisins, and maraschino cherries add a lightly sweet flavor to the pumpkin bread. Loaves will make a wonderful homemade gift during the holiday season.

Ingredients For forest's pumpkin bread

  • 3 c
    sugar
  • 1 c
    vegetable oil
  • 2 c
    pumpkin puree
  • 2/3 c
    water
  • 4 lg
    eggs
  • 3 1/3 c
    all-purpose flour
  • 2 tsp
    baking soda
  • 1 1/2 tsp
    cinnamon
  • 1/2 c
    dried cranberries, chopped
  • 1/2 c
    walnuts, chopped
  • 1/2 c
    dates, chopped
  • 1/2 c
    dark raisins
  • 1/2 jar
    maraschino cherries, cut in half (12 oz jar)
  • 1/4 c
    butter (more if needed)

How To Make forest's pumpkin bread

  • Batter ingredients added to a mixing bowl.

    Preheat the oven to 350 degrees F. Grease and flour three 9x5 loaf pans. Combine sugar, oil, pumpkin, water, eggs, flour, baking soda, and cinnamon in a large bowl.

    Mix well.
  • Fruit folded into the batter.

    Fold in the fruit until well mixed.
  • Dividing batter into loaf pans.

    Divide the batter evenly among the 3 loaf pans (about 3 cups per pan).
  • Baking the pumpkin bread.

    Bake 1 hour.
  • Rubbing butter over pumpkin bread.

    After baking, while still hot, rub the top of the bread loaves with butter. This pumpkin fruit bread is best if frozen and taken out as needed.
