Ingredients For caribbean style banana bread

  • 2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup butter, softened, 1 stick
  • 1/2 cup packed brown sugar
  • 2 eggs, lightly beaten
  • 1 tsp. vanilla extract
  • 1 cup mashed bananas
  • 1/2 cup chopped macadamias
  • 8 oz. cream cheese, softened
  • 1 egg
  • 1/4 cup packed brown sugar
  • 1/2 cup flaked or shredded coconut

How To Make caribbean style banana bread

    Grease the bottoms and 1/2 inch up the sides of 2 loaf pans. Mix the flour, baking powder, baking soda, cinnamon and salt together.

    Cream butter at high speed in a mixing bowl for 30 seconds. Add 1/2 cup brown sugar, 2 eggs and vanilla. Beat til smooth. Add dry ingredients alternately with the bananas, beating at low speed til smooth after each addition. Stir in macadamias.

    mix the cream cheese, 1 egg and 1/4 cup brown sugar in mixing bowl. Beat at medium speed til almost smooth. Stir in coconut.

    Spoon 1/4 of the banana batter into each loaf pan. Spread 1/4 of the cream cheese mixture over the batter in each pan. Cut through with a spatula to marbleize. repeat with remaining batter and cream cheese mixture. Don't cut through to marbleize.

    Bake at 350 for 50 minutes or til wooden pick inserted into center of loaves comes out clean. Cool in loaf pans on wire rack for 10 minutes. Remove to wire rack to cool completely. Makes 2 loaves.
