Ingredients For southern style breakfast puffs

  • 1 1/2 c
    flour
  • 1/2 c
    confectioners sugar
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 3/4 tsp
    nutmeg
  • 1/2 c
    milk
  • 1/2 c
    water
  • 1/4 c
    vegetable oil
  • 1 1/2 tsp
    lemon peel, grated
  • 3
    eggs
  • confectioners' sugar
  • vegetable oil (for deep frying)
  • 1/4 tsp
    cinnamon (optional)

How To Make southern style breakfast puffs

    Heat some (clean) oil 2-3 minutes in deef fryer or deep saucepan.

    Combine flour, 1/2 cup confectioners sugar, baking powder, salt and nutmeg in a small bowl. Set aside.

    Combine milk, water, oil (1/4 cup) and lemon peel in a saucepan. Heat till boiling.

    Add flour mixture aal at once. Beat in until mixture pulls away from the side of the pan and forms like a ball. Remove from heat and cool slightly.

    Add eggs, one at a time. Beat in between.

    Drop your dough by tablespoonfuls into the oil. Fry 3-4 puffs at a time for 4-6 minutes or till golden. Turn as needed.

    Drain them on paper towels. Then sprinkle with confectioners sugar. (You can put them one at a time in a paper or plastic bag with sugar and shake. ) (You can also mix 1/2 cup of confectioners sugar and 1/4 teaspoon of cinnamon and sift over warm puffs.)
