Ingredients For southern style breakfast puffs

1 1/2 cflour

1/2 cconfectioners sugar

1 tspbaking powder

1 tspsalt

3/4 tspnutmeg

1/2 cmilk
-
1/2 cwater
-
1/4 cvegetable oil
-
1 1/2 tsplemon peel, grated

3eggs
-
confectioners' sugar
-
vegetable oil (for deep frying)

1/4 tspcinnamon (optional)
How To Make southern style breakfast puffs

1Heat some (clean) oil 2-3 minutes in deef fryer or deep saucepan.

2Combine flour, 1/2 cup confectioners sugar, baking powder, salt and nutmeg in a small bowl. Set aside.

3Combine milk, water, oil (1/4 cup) and lemon peel in a saucepan. Heat till boiling.

4Add flour mixture aal at once. Beat in until mixture pulls away from the side of the pan and forms like a ball. Remove from heat and cool slightly.

5Add eggs, one at a time. Beat in between.

6Drop your dough by tablespoonfuls into the oil. Fry 3-4 puffs at a time for 4-6 minutes or till golden. Turn as needed.

7Drain them on paper towels. Then sprinkle with confectioners sugar. (You can put them one at a time in a paper or plastic bag with sugar and shake. ) (You can also mix 1/2 cup of confectioners sugar and 1/4 teaspoon of cinnamon and sift over warm puffs.)

8Makes 32 puffs.
