Real Irish soda bread is a very simple quick bread. It doesn't have raisins or eggs, this is known as railroad bread. This is a variation on real soda bread passed down in my family for over a century. The wheat flour in this makes this a brown bread, NOT soda bread. This recipe has won ribbons for its tastiness. Ingredients For irish brown bread

  • 3 c
    wheat flour
  • 1 c
    all purpose flour
  • 1 3/4 c
    buttermilk
  • 1 tsp
    salt
  • 1 1/2 tsp
    baking soda
  • 1 stick
    butter, room temperature

How To Make irish brown bread

  • 1
    Preheat oven to 425.
  • 2
Sieve and combine all dry ingredients. Rub in butter by hand until flour is crumbly.
  • 3
Mix in the buttermilk. The dough will be sticky. Add more buttermilk as needed.
  • 4
Knead on a lightly floured board. Be careful not to over work the dough. Flatten the dough ball out. Place on a greased and lightly floured cookie sheet. Cut a cross into the top of the dough.
  • 5
Bake at 425 for 45 minutes. You will know the bread is done when you tap the bottom of the bread and it sounds hollow. Serve with butter.
  • 6
STORAGE: This is just as important as baking. Place the bread in a tea towel, wrap it entirely and sprinkle water on top of the cloth.
