I think I gleaned this from a newspaper long, long ago. I never make gravy with this. I just use the juices from the roasting pan to spoon over the popovers--yum!

Ingredients For ellen's yorkshire pudding popovers

  • 1 c
    all purpose flour
  • 1 c
    milk
  • 3
    eggs
  • 1 tsp
    salt
  • 4 Tbsp
    meat drippings from roast

How To Make ellen's yorkshire pudding popovers

  • Adding first four ingredients together.

    Combine first four ingredients in medium size bowl; beat together with mixer until smooth--about one minute.
  • Adding beef broth to muffin pan.

    Stir up drippings in roasting pan to mix fat and meat juices. Measure one teaspoon pan drippings into each cup of a 12-cup muffin pan. Place muffin pan into oven (400 degrees) for 3 minutes to heat.

    Pour popover batter into muffin cups, filling each half to 3/4 full. Bake at 400 degrees for 35-40 minutes, until popovers are puffed and golden brown.
  • Yorkshire Pudding popovers, fresh from the oven!

    Serve with gravy, broth, or butter, alongside roast beef and vegetables.
