I am not a big fan of your normal fruit cakes but this cake is really different and so very good. Brazil nuts are my favorite nut just to crack and eat at the holidays, so when I found this recipe I just had to try it. Well, it turned out so good that I have been making it for years now and it's a favorite with family and friends.

Ingredients For brazil nut cake

  • 1 c
    coconut
  • 1 c
    dates, chopped
  • 3/4 c
    sugar
  • 3 c
    brazil nuts,whole
  • 1 jar
    4-oz. red maraschino cherries
  • 1 jar
    4-oz. green maraschino cherries
  • 3 lg
    eggs
  • 3/4 c
    all purpose flour, sifted
  • 1/2 tsp
    salt
  • 1/2 tsp
    baking powder
  • 1 tsp
    vanilla

How To Make brazil nut cake

    Preheat oven to 300 degrees. Grease and line a loaf pan with wax paper.

    In a large bowl,combine nuts, dates, coconut and well drained cherries. Sift flour, salt and baking powder in a small bowl, sprinkle over nut mixture. Mix well using hands until all coated.

    In a small bowl beat eggs until foamy, stir in vanilla. Stir into fruit and nut mixture till well coated. Spoon into prepared pan and bake at 300 degrees for 1 hour and 45 minutes. Cool in pan about 15 minutes. Place on wire rack to cool completely. When completely cool wrap in foil and store in refrigerator.
