I've had this recipe for years, don't remember where I got it from, but these are so yummy!

Ingredients For sweet oatmeal-maple muffins

  • 1 c
    quick-cooking oats
  • 1/2 c
    fat-free milk
  • 1 c
    flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/4 tsp
    cinnamon
  • 3/4 c
    pure maple syrup
  • 1/4 c
    melted butter
  • 1
    egg, lightly beaten
  • 1/2 c
    chopped pecans

How To Make sweet oatmeal-maple muffins

    Heat oven to 400. spray a 12-cup muffrin pan w/ cooking spray. In bowl, combine flour, baking powder, salt and cinnamon.

    In another bowl, combine oats and milk, let stand 5 mins. Stir maple syrup, butter and egg into oats mix. Add oat mix into flour mix. Stir until just moistened.

    Fold 1/2 of the pecans into mix. Spoon batter into cups, 2/3-full. Sprinkle w/ remaining pecans. Bake 15-18 mins, or until a toothpick inserted in center comes out clean. Serve warm.
