cheddar corn muffins

I didn't have any cornmeal to make cornbread and did not want to venture out to the store so this is what I came up with to serve with my Crockpot Pumpkin Turkey Chili. They were hubby and son approved.

Ingredients For cheddar corn muffins

1 canwhole kernel corn, drained (liquid reserved)

1/4 cbutter, melted

2 cbiscuit mix
-
1/3 cdry milk powder
-
3 Tbspsugar

1 ccheddar cheese, shredded

1egg, beaten
How To Make cheddar corn muffins

1Drain corn reserving liquid. Add to melted butter to measure 2/3 cup liquid.

2Combine biscuit mix, dry milk, and sugar.

3Stir in corn and cheese. Add liquid ingredients and egg. Blend lightly.

4Fill greased muffin cups 2/3 full. Bake 400* for 25 minutes.

5Remove from pan immediately.
