Ingredients For banana oat muffins

  • 3 lg
    very ripe bananas
  • 1/2 c
    sugar
  • 1
    egg
  • 2 Tbsp
    all bran (opt.)
  • 1/3 c
    vegtable oil
  • 1/2 c
    unbleached white flour
  • 1 c
    quaker oat bran (do not substitute)
  • 1/4 c
    oats, quick cooking
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • dash
    salt
  • 1/4 c
    raisins (opt.)
  • 1/4 tsp
    nutmeg

How To Make banana oat muffins

  • 1
    Mash bananas with a fork. Stir in sugar, egg and All Bran. Mix well. Add oil and beat with a fork.

    In separate bowl stir together, flour, oat bran, oats, baking soda, baking powder, salt, nutmeg, and raisins. Add dry ingredients all at once to banana mixture. Stir until flour is moist. Do not overmix.

    Spoon into 12 paper-lined muffin cups. Bake at 375 degrees for 18-20 minutes or until a wooden toothpick comes out clean when inserted in the center of muffin.
