A wonderful homemade muffin to start the day. Dense and moist, the muffin is filled with wonderful banana flavor. We love the bits of tart cranberries throughout. On top is a sweet and crunchy streusel. Perfect with a cup of coffee or tea.

Ingredients For banana cranberry crunch breakfast muffins

  • 2 1/2 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 3/4 c
    light brown sugar, packed
  • 1/4 tsp
    ground cinnamon
  • 4-5
    ripe bananas, smashed
  • 1/2 c
    dried cranberries
  • 1/2 c
    vegetable or canola oil
  • 1/2 c
    buttermillk
  • 2 lg
    eggs
  • 1/2 tsp
    salt
  • 1/2 tsp
    vanilla extract
  • 1/4 tsp
    almond extract
  • 1/3 c
    granola cereal - your favorite
  • STREUSEL TOPPING FOR MUFFINS
  • 1/2 c
    all-purpose flour
  • 1/2 c
    white sugar
  • 1/4 c
    butter
  • 1 tsp
    ground cinnamon

How To Make banana cranberry crunch breakfast muffins

  • Dry ingredients added to a bowl.

    Preheat the oven to 375 degrees F. In a large bowl, mix together flour, baking soda, brown sugar and cinnamon with a whisk. Set aside.
  • Wet ingredients and granola combined in a bowl.

    In a separate large bowl, mix together smashed bananas, cranberries, oil, buttermilk, eggs, salt, vanilla extract, and almond extract. Mix well. Then add granola.
  • Combining wet and dry ingredients.

    Make a well in the center of the dry ingredients and mix the buttermilk/banana mixture into it until well blended.
  • Batter poured into muffin tins.

    Grease muffin cups or line each cup with a paper liner. Place batter in each cup to a level of 3/4 full.
  • Streusel ingredients combined in a bowl.

    Mix together streusel ingredients. Divide the streusel mixture evenly over the top of each muffin.
  • Streusel topped muffins in the oven.

    Bake for 25 minutes until a toothpick comes out clean.
