stagecoach inn's hush puppies
When Bubba and I lived in Huntsville, Texas we would frequent the Stagecoach Inn supper. Bubba loved their Hush Puppies and asked me to try and get their recipe. So I became friends with the manager and after having her over for countless weekend catfish fries. I hinted that Hush Puppies would be really good with the fish and how much Bubba loved the Inn's recipe for them. Long story short the next weekend she came with the recipe.

Ingredients For stagecoach inn's hush puppies

2 ccorn meal

1 tspbaking powder

3 Tbspsugar

1/4 cbutter
-
1 Tbspsalt

1/2 cfinely chopped jalapenos

3 1/2 cwater
How To Make stagecoach inn's hush puppies

1Combine meal, baking powder, sugar, and salt. Put water in a medium sized saucepan and bring to a boil.

2Add slowly to boiling water, stirring briskly.

3As soon as mixture is smooth remove from heat.

4Stir in butter and chopped jalapenos, cool.

5Form into finger shaped rolls.

6Fry in 2-inches hot fat, 375 degrees, until golden brown. Drain on absorbent paper or paper grocery bags.
