Very tasty!! I had these at a meeting at work. Black forest ham was used. I hope you enjoy these as much as the crew and I did. Not just for breakfast. Can also have for brunch.

Ingredients For muffin tin eggs

  • muffin tin pan, sprayed
  • thin sliced ham slices
  • 1 can rotel tomatoes, drained
  • grated cheddar cheese
  • eggs

How To Make muffin tin eggs

  • 1
    Spray each muffin tin well with non-stick spray.
  • 2
    Place a slice of ham in bottom of each muffin well.
  • 3
    Place 1 tablespoon of tomatoes on top of ham.
  • 4
    Sprinkle with favorite grated cheddar cheese over tomatoes.

    Break 1 egg into each well.
  • 6
    Sprinkle with desired amount of salt and pepper.

    Bake @ 350 for 18-20 minutes or until the yolks are as firm as desired and whites are cooked through.
