Ingredients For irish coffee muffins

2 call purpose flour

1/3 cgranulated sugar

2 Tbspbaking powder

1/2 tspsalt

2 Tbspcoffee liqueur (kahlua)

2 Tbspirish whiskey
-
1 Tbspinstant coffee granules

milk
-
1egg, beaten
-
1/2 c(8 tablespoons) melted butter or margarine

24 tspturbinado sugar (raw sugar)
How To Make irish coffee muffins

1Preheat oven to 350 degrees F Spray 12 count muffin tin with nonstick cooking spray. In a large mixing bowl, stir together flour, sugar, baking powder and salt. Make a well in the center.

2In a 1 cup measure, dissolve coffee granules in coffee liqueur and whiskey. Add enough milk to measure 1 cup. Add beaten egg and melted butter to coffee-milk mixture. Whisk to blend. Gently stir liquid into dry ingredients just until moistened; batter will be lumpy. Spoon a little less than 1/3 cup of batter into each muffin cup. Sprinkle 2 tsps turbinado sugar over each batter filled cup.

3Bake 18 minutes, or until the top springs back when gently touched. Let rest a couple of minutes before removing muffins from tin and cooling on a baking rack.
