1/3 C. Dairy sour cream

1 Beaten egg yolk

1 1/2 C. All purpose flour

1/4 C. Sugar

3/4 C. Butter (or margarine)

1 Tbs. Butter (or margarine)

2 med. cooking apples (peeled and chopped)

1/4 C. Raisins (or light raisins)

1 Tbsp. Brown sugar

1 tsp. Apple pie spice

1/2 Recipe Powdered Sugar Icing (see directions below)
How To Make apple half moon cookies

1In a small bowl stir together sour cream, egg yolk, and vanilla; set aside. In a large bowl stir together flour and sugar. Cut in the 3/4 cup butter(or margarine) until mixture resembles coarse crumbs. Then stir in egg yolk mixture until well combined. Divide dough in half. Cover and chill about 3 hours or until easy to handle. Meanwhile; in a small saucepan melt the 1 tablespoon butter (or margarine). Add apples, raisins, brown sugar, and apple pie spice. Cook over medium heat about 4 minutes or until apples a just tender, stirring occasionally. If necessary, drain off any excess liquid. Cool the apple mixture. On a lightly floured surface, roll each half of the dough to 1/8 inch thickness. Using a 2 1/2 inch round cookie cutter, cut the dough into rounds. Place 1/2 inch apart on an ungreased cookie sheet. Spoon a scant teaspoon of the apple mixture onto the center of each round. Fold the rounds in half over the filling. Using the tines of a fork, press edges together to seal. Bake in a 350F oven for 10 to 12 minutes or until lightly browned. Remove cookies from the cookie sheet and cool on a wire rack. Drizzle cookies with icing. Store cookies in the freezer. Powdered Sugar Icing; 1 C Sifted powdered sugar 1/4 tsp Vanilla Milk (or orange juice) In a small mixing bowl, combine powdered sugar and vanilla. Stir in 1 tablespoon milk (or orange juice), adding1 teaspoon at a time, until icing is smooth and of drizzling consistency. Drizzle icing over cake, bread, or cookies. Makes about 1/2 cup
