Sue our nurse practitioner brought this salsa to one of our pitch ins. Its cold crisp and full of flavor. You know it was great because it was all gone.

Ingredients For sue's salsa

  • 1 can
    black eyed peas
  • 1 can
    pinto beans
  • 1 can
    black beans
  • 1 can
    white shoepeg corn
  • 1 oz
    jar sliced pimento
  • 1 c
    diced celery
  • 1 sm
    diced onion
  • 1 c
    dice green pepper
  • 1 c
    apple cider vinegar
  • 1/4 c
    canola oil
  • 3/4 to 1 c
    sugar

How To Make sue's salsa

  • 1
    drain, rinse, and toss black eyed peas, pinto beans, white shoepeg corn and pimento with celery,onion and green pepper
  • 2
    in a separate microwaveable bowl mix apple cider vinegar, canola oil, and sugar
  • 3
    microwave at 20 to 30 second intervals stirring in between till all sugar is dissolved into clear liquid
  • 4
    pour mixture over beans and veggies and refrigerate over night sever with scopes
