A neighbor came to my rescue one summer when I'd planted more cucumbers than I could eat. Now we have them whether I garden or not. So easy!

Ingredients For refrigerator sweet pickles

  • 2 lg
    cucumbers, peeled and sliced
  • 1 md
    green pepper, chopped
  • 1 c
    vinegar (either white or apple cider)
  • 1 tsp
    celery seed
  • 2/3 c
    sugar
  • 1/2 c
    chopped onion
  • 1 1/2 tsp
    salt

How To Make refrigerator sweet pickles

  • 1
    Combine cukes, peppers, onions, and celery seed in layers to help distribute flavor in a quart jar. Combine the rest of the ingredients and pour over cucumber mixture.

    Refrigerate for at least one hour before eating, overnight is better.

    When there is room in the jar you can simply add more cucumbers to make more pickles. I can get 2 or 3 rounds out of the vinegar before it gets too watered down to give good flavor.
