Ingredients For crunchy vegetable cheese ball

  • 1 c
    shredded carrots
  • 1 pkg
    light cream cheese, softened
  • 1 c
    (4 ounces) shredded low fat cheddar cheese
  • 1 tsp
    instant minced onion
  • 1 c
    finely chopped broccoli
  • assorted crackers

How To Make crunchy vegetable cheese ball

    Press carrots between paper towels to remove excess moiosture; set aside.

    In a large bowl, blend cheeses and onion. Stir in carrots and broccoli; combine thoroughly. Cover with plastic wrap. Refrigerate at least two hours.

    Shape mixture into a ball. Wrap with plastic wrap Chill until ball holds it's shape. Remove wrap and serve with assorted crackers
