addictive shrimp & celery appetizer

When I lived in San Jose, CA, I used to go to a great local fish and chips place. While waiting for my order, I usually treated myself to their only 'appetizer', a little foam container stuffed with chopped shrimp and celery, bound together with mayonnaise. So simple, but surprisingly addictive! I don't get back to San Jose very often now, so I decided to come up with my own version. Maybe it is just me, but I actually crave this sometimes!

Ingredients For addictive shrimp & celery appetizer

  • 4 - 6
    stalks celery
  • 1 c
    diced shrimp (i use the cans of 'salad' shrimp)
  • 1/2 tsp
    celery seed
  • 1/2 tsp
    salt
  • 2 tsp
    minced shallots, or green onions
  • 1/2 c
    mayonnaise

How To Make addictive shrimp & celery appetizer

    Peel celery to get rid of stringy material. Chop finely. If shrimp is from a can, rinse well before using. Chop shrimp roughly.

    Mix mayonnaise with all other ingredients. Adjust seasoning as needed. Chill. Enjoy!
