This is my version of Southwest Eggrolls. Serve w/ Spicy Southwest Ranch sauce.

shredded chicken

spinach, frozen
1 c

corn kernels, frozen

black beans
1 3/4 c

shredded pepperjack cheese
tortillas, flour
vegetable oil

How To Make southwest dippers

Mix together: chicken, spinach, corn, beans and cheese.

Spoon mixture onto flour tortilla.

Roll up tortilla 'egg-roll' style, and drop in hot oil. Fry until tortilla is crisp and cheese is melted. Serve with Spicy Southwest Ranch.
