prairie fire bean dip

Back in the early 1970's we had a group of us young married couples that always got together every weekend to do fun things. We'd play air hockey, go out for dinners in nice restaurants, listen to music, watch movies and have pizza parties. We never just had pizza only, but we'd put together a full buffet of appetizers and munchies because it would always be a full evening of fun, so we needed lots of food to graze on. Those days are gone, and most of us have split from our first spouses and moved on, but those early memories still remain! They were good times!

Ingredients For prairie fire bean dip

  • 4 can
    16 oz each red kidney beans, drained, liquid reserved
  • 1/2 c
    butter
  • 16 oz
    shredded cheddar and co-jack cheeses, mixed
  • 1/3 c
    diced jalapenos. i used pickled jarred kind. use as much as you prefer.
  • 2 Tbsp
    minced fresh onion
  • 2 clove
    garlic, minced

How To Make prairie fire bean dip

  • 1
    Drain beans, reserving 2/3 cups of the liquid
  • 2
    Mash beans with potato masher until creamy
  • 3
    Mix together all ingredients
  • 4
    Heat over very low heat until cheese is fully melted.

    Simmer on very low, very slow heat for 20 minutes. I recommend putting them into crock pot for this...less chance to burn cheese on bottom.

    Serve with hot with Dip Size Frito Chips or Tortilla Chips!
