Ingredients For zucchini hush puppies

  • for hush puppies:
  • ½ small red onion – chopped fine
  • ¼ cup fresh italian parsley – chopped
  • 3 zucchini – peeled and grated
  • 1 ½ cups corn meal
  • 1 ½ cups flour
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ½ cup milk
  • 2 eggs - beaten
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ¼ tsp. paprika
  • ¼ tsp. red pepper flakes
  • vegetable oil for frying
  • for the dipping sauce:
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • pinch of salt
  • pinch of red pepper flakes
  • juice of ¼ lemon

How To Make zucchini hush puppies

    For Hush Puppies: In a large bowl combine the grated zucchini, chopped onion, flour, corn meal, baking soda, baking powder, milk, eggs, and seasonings. Mix together and let sit for about 10 – 12 minutes. Heat a large cast iron frying pan with about ½ inch of vegetable oil. Using a teaspoon, carefully spoon the batter into the hot oil. Do not overcrowd the pan. When the fritter is golden on one side, carefully turn over and finish cooking on the other side. Lay the fritters on a plate lined with paper towel to. For the Dipping Sauce: Combine all of the ingredients for the dipping sauce in a small bowl and mix.
