Ingredients For watermelon scallop ceviche

  • 1 c
    watermelon puree (blend watermelon and strain – reserving juice)
  • 1/2 c
    fresh lime juice
  • 2 Tbsp
    minced parsley
  • 1 Tbsp
    fresh lemon juice
  • 1 Tbsp
    premium vodka, optional
  • 1 Tbsp
    minced fresh chives
  • kosher salt and freshly ground black pepper, to taste
  • 1 lb
    sushi grade fresh sea scallops
  • rice crackers or crispy flatbreads, for serving

How To Make watermelon scallop ceviche

    Mix together all of the ingredients except the scallops in a glass serving bowl.

    Slice the scallops into 1/4-inch thick “coins” and drop into the dressing
  • 3
    Cover and refrigerate for 2 hours, then serve with rice crackers or crispy flatbread.
