Nuts for Peanut Butter

Snickers Cake

I know I have shared this with you all before, but I have a big weakness for peanut butter. And recently, all I seem to want to do is grab a spoon, a jar and dig in. My craving is satisfied (at that moment) and I’m one happy lady. But what’s really fun for me, is to try some of the yummy peanut butter recipes you have shared.

Paul Moore’s Snickers Cake made me stop dead in my tracks (…well at least stopped my mouse clicking onto the next recipe). Chocolate, caramel and peanut butter?! Oh my. This cake tastes just like the candy bar, and I couldn’t be happier. Feel free to use more or less peanut butter to suit your PB craving. As Paul says, “it’s very, very rich.” It’s also very, very good!

Fudge Brownie Peanut Butter Pie? June Neal’s wonderful recipe had me at fudge. June explains that her and her mom were eating a pie with “[a] filling [that] was great … but kind of boring.” So, she “decided to experiment and came up with this recipe.” June goes on to share that it was a hit and “is now requested by someone every holiday.” The Kitchen Crew is asking me to make this one again. It was a hit around our table too.

Ahh… and then there’s Vicky Hunt’s Peanut Butter Truffles which are divine. Your friends and family are not going to be able to stop popping these bite sized goodies into their mouths. According to Vicky, these are “great for parties, socials, and to eat all by yourself.” The combination of the white chocolate and peanut butter made for a truly decadent filling. Vicky suggests rolling these in cocoa which-to me-makes ’em even better.

I do love some sort of chocolate along side my peanut butter. But, there are a few peanut butter and banana recipes that caught my eye. Oh, the King would be so proud of these.

Sugiyarti Jorgenson’s recipe for Peanut Butter Banana Rolls is a great twist on the “famous” peanut butter & banana sandwich. Sugiyarti suggests using lumpia wrappers when making these. “[You find these in] the frozen section [and] work better. They’re thin and crispy, even better when they are baked.” She also suggests serving these warm. I drizzle chocolate on top for even more gooey goodness!

Looking for some peanut butter deliciousness in the morning? Lori Roach’s Roasted Banana Scones with Peanut Butter Glaze are a wonderful breakfast treat. Lorie combined two of her favorite ingredients – bananas and peanut butter – into one fantastic scone. These are super yummy served with a nice cup or coffee or tea.

Whether your pairing peanut butter with chocolate, bananas or just having a classic PB&J sandwich, I encourage you to give in to your craving. A little peanut butter, never hurt. After all, it’s usually the little things in life that make us happy.
