Blueberries Take Centerstage in These Sweet Recipes

Simple, Very Blueberry Flavored Pie

Blueberries are one of my favorite summer berries. Not only are they good for you (packed with vitamin c and fiber), they taste yummy. I went blueberry picking this weekend and came home with more than I could ever eat. But, I have a few blueberry recipes they’ll be perfect for!

After one bite of Dennis Purcell’s scrumptious Simple, Very Blueberry Flavored Pie, your taste buds will be bursting with happiness. “I am pretty much a purist when it comes to fruit pies,” says Dennis. “I don’t add cream or anything else to dilute the wonderful berry flavors.”

If you’re a blueberry lover, then this recipe is for you. Each bite has the wonderful taste of fresh blueberries. It’s fantastic!

“My husband loves anything pineapple and I have a love of blueberries,” reveals Bobbie Weiner. “This Pineapple Blueberry Chess Pie is best served chilled and is fantabulous on a summer day.”

Chess pie has been a favorite of mine since I was a kid. Combining blueberries and pineapple isn’t something I would have thought of, but wow are the flavors good. You have the creaminess from the pie combined with the sweet and tart from the pineapple and berries. Yum!

Michelle Kelley combines blueberry pie with cheesecake for her Upside Down Blueberry Pie Cheese Cake. After a bite of this, all I can say is wow! “I tried this because I had some leftover blueberries,” explains Michelle. “My husband really loves this one.”

This is the kind of dessert you’ll have “just one more bite” and realize the cake’s almost gone. The blueberry base is fresh with a slight sugar crunch. The cheesecake layer’s creamy and delicious. This is really good!

Your family will love waking up on a Saturday to a batch of Sherry Monfils’ Fluffy Lemon-Blueberry Pancakes. “These were always my daughters favorite pancakes when she was a little girl, and she still loves them,” reminisces Sherry.

Sherry jazzes-up a basic pancake mix by adding vanilla yogurt and lemon zest. I suggest using fresh blueberries since they’re in season, but frozen will work if you’re in a pinch. These light, fluffy pancakes are a refreshing way to start the day!

Araxy Aykanian’s Healthy Blueberry Muffins will pair nicely with your morning cup of coffee. “A few years ago, I started cooking healthy,” shares Araxy. “These blueberry muffins are easy to make and so delicious.”

Cooking healthy doesn’t mean you need to lose any flavor, and these blueberry muffins are the perfect example! Light, fresh and super tasty, these would be great for breakfast or as an afternoon snack.

Lemon and blueberries go together like peas and carrots! That’s why I’ve fallen in love with Patti Jones’ Lemon Glazed Blueberry Tea Bread. The glaze on top of this bread is made with granulated sugar which adds a delightful crunch. One bite of this treat and your day will get much sweeter.
