Chicken Recipes to Liven up Your Dinner Menu

Chicken Pineapple Kabobs

Recently chicken was on sale at the grocery store so I stocked up. Each time I open my freezer, though, I realize I may have gone a bit overboard.

I need to clear some space, so we're having chicken this week in my house. But I'm not worried about everyone getting bored, because there are so many delicious chicken recipes!

I love chicken salad and Stacey Vadas' Fabulous Chicken Salad. "Over the years, and with my children and husband as my taste-testers, I have come up with this recipe which has a secret ingredient that adds a great taste," teases Stacey.

The grapes and apple add sweetness and crunch. The addition of coleslaw helps make it extra creamy. And that secret spice... it definitely adds to the flavor! Pick up a few croissants, or your favorite bread, and make up a few sandwiches.

Lauren Mitchell's Grilled Chicken Sandwich with Cilantro Lime Mayo is downright scrumptious. "This was a spur of the moment idea that turned out great, super fast and healthy," shares Lauren.

The combo of grilled chicken, lime and taco seasoning is terrific. It will definitely be a regular on my summer menu - and I'd recommend it to yours too.

"Every one in my family loves this dish," says Melinda Lourenco. "It's simple and saves on ordering Chinese take-out." The flavors in the marinade make this Asian Marinated Chicken Breast super yummy. Add some rice and you've got tasty take-in chicken. I guarantee this chicken will be requested often.

"I created these Homemade Chicken Hot Pockets out of necessity for something different and something easy to eat at work," explains David Henson.

These are super easy and tasty. I'm never going to grab a box from the frozen food aisle again. The best part is you can experiment with your favorite fillings. Great for lunch, snack or a light dinner, kids and adults will not be able to get enough of these!

Luci Vieira's Chicken Pineapple Kabobs is an easy recipe you can fix ahead of time. Then, slide on the skewers for a quick meal after work or a great entree for your next cookout.

"Everyone loves these quick and easy chicken and pineapple kabobs," exclaims Luci. "The longer you marinate the chicken the better." These kabobs have a great mix of flavor and will be a hit around the table!

"I had this at a local restaurant many years ago and loved it," shares Lucille Hoerle on how she developed her Chicken Annabella recipe. "I came home and tried to duplicate it and this is my version."

The presentation of this dish is lovely and looks impressive. But it's very easy to make! All you need to add is a simple salad and dinner is served.

I can't talk about chicken and not mention fried chicken. In the south, it's a summer staple and Virginia Dean's Southern Fried Chicken recipe will make you look like you're kin to the Colonel!

"Everyone who has ever tried my chicken really loves it, and wants to know how I get it so crispy," says Virginia. I love the buttermilk soak combined with the self-rising flour... super crunchy and moist.

Chicken? Did you say chicken? It's the meat that I cook most often. I used to tell my husband he ate too many hamburger and red meat until I got in here on Just a Pinch and tallied up my chicken recipes...I had to apologize because chicken is what he eats the most of. LOL Now I had to pinch the Chicken Annabella as that sounds like a must try recipe that my husband & I will both love.
I would have to say of all my chicken recipes my husband requests most is Incredible Italian Wedding Soup that I received when on a retreat at a monastery. My top pick of the recipes my husband Anthony makes is Tony's Chicken Paprikash with Spaetzel (Dumplings). Two other favorites creations that I've come up with while cooking in the kitchen; one is Fetalicious Chicken & Tomato Plate and the other is super simple made with leftovers called French Onion Chicken Panini and all 4 are beloved in our home.
