Reinvent Cauliflower with Full-Flavored Recipes

Roasted Bacon Cheddar Cauliflower

Lately people seem to be talking about cauliflower. Besides being low in calories, cauliflower is an excellent source of vitamin C and fiber. Plus, it tastes good!

I’ve been a fan since I was kid. Back then, I thought smothering it in cheese was the best thing ever (but probably not the healthiest!). I’m happy to say my palate has definitely improved since then. With all the buzz, I’m inspired to search for new – and tasty – cauliflower recipes.

Sandy Smith really jazzes up cauliflower in her Roasted Bacon Cheddar Cauliflower. “[This is] something I just threw together,” shares Sandy. I love making a great recipe out of ingredients I have on hand.

The combination of herbs, cheese and bacon grease makes the roasted cauliflower very flavorful. Then Sandy adds more cheese and bacon on top? Well that takes this recipe over the top! We can see why her family went crazy for this.

“It’s just like my loaded potatoes, only made with cauliflower,” is how Jamie Beecham describes her Loaded Cauliflower. If someone isn’t a fan of cauliflower, I suggest serving them Jamie’s recipe. You will convert them.

Sour cream, mushrooms, cheese and bacon are combined for one flavorful casserole. Jamie provides a lightened up version of this recipe too… which is just as tasty!

Marti Green’s Healthy Ginger-Cumin Cauliflower is another great recipe lighter in calories and couldn’t be easier to make. “Amazing and tasty,” is how Marti describes her recipe.

Cauliflower alone can be a bit bland. But, Marti adds ginger, cumin and turmeric which pack a ton of flavor into this great side dish. You almost forget you’re eating healthy.

“I only made two cups of this and it was not enough,” says Vickey Yott Morrisey. “You can increase or decrease the amounts of spices to your taste.” The spices in Vickey’s Spicy Roasted Cauliflower were perfect for my taste buds. Combined with the sweetness roasting the cauliflower brings out, I love this recipe.

Soups are my go-to meals at this time of year, and I’ve become a fan of Patricia Kutchins’ Cauliflower Soup recently. “This is a rich, hearty soup that I dreamed up one snowy night during the holidays,” explains Patricia.

Easy and hearty, this recipe would be a great starter for a meal or make a lovely lunch. This soup is a bit chunky which I loved. But if you want a more smoother soup, give it a few pulses with an immersion blender.

When it’s prepared well, there’s nothing that beats cauliflower… I mean it! Steamed, roasted, sauteed or smothered in cheese, there are many ways to prepare this popular veggie. Try one of these recipes and I think you’ll agree.
