Quinoa Crustless Ham and Kale Quiche

You would think after making Easter dinner for many years I would know what size ham to buy. I think "I'm not going to have enough" and go for a slightly larger size. Well ... it never fails. Every year, I'm always left with TONS of leftovers.

So what to do with a tray of ham? You can only eat so many ham sandwiches. But, if you are looking for a great ham sandwich idea, take a look at Stefanie Wilson's Ham Delights. It's really yummy and would be great for lunch the next day.

Pam Ellingson shared her recipe for Mango-nnaise Ham Salad on Sourdough Rolls that is truly tasty (and hubby approved). "Hubby loves ham [and] I had a recipe challenge that called for creativity," says Pam. "The required ingredients [were] frozen fruit and dill pickled - eek." Wouldn't you know ... this sandwich works! This has a surprising taste and texture. And by that, I mean it's delicious. We were taken back by how we loved the candied dill slices! Yum, yum.

Found a way to use my ham in a delicious breakfast recipe too when I tried Jai Stephens Baked Scrambled Egg Casserole. Jai mentions you could substitute sausage in this recipe too. I've had success with both! This is an easy, versatile breakfast casserole. I've also substituted other cream soups when I don't have cream of mushroom on hand.

Incorporating kale your Easter dinner this year? I'm going to make sure I have extra and make Patty Bronson's Quinoa Crustless Ham and Kale Quiche. "In this recipe, I've used the red quinoa as it holds up a little better than the white," explains Patty. Never had quinoa, but are curious? This recipe is such a great way to try it. It's so danged good that we can't imagine anyone not wanting to dig in for seconds.

And although the weather may be getting warmer (at least where I live), I still love to make soup. Desiree Wilmoth's Ham Dumpling Soup is a great one! Initially, I was not sure how ham and dumplings would pair, so I tried this to satisfy my curiosity. Turns out the flavors are wonderful! I used my honey baked ham bone ... you could taste all the flavors coming through in the soup. De-lish.

How can you not love a recipe called Bubbles and Squeak? It just makes me happy hearing the name. And, I was really happy when I tasted Sea Sun's recipe. "The name [for this English dish] comes from the noise it makes when it's cooking," says Sea. This was a hit around the test kitchen table! A great way to re-invent your ham.

Maybe one year I'll figure out how to make the appropriate amount of food. Until then, I'll have fun trying new ways to recreate my leftovers. I'm curious, what's your favorite take two recipe?

That is someone else's recipe, but I have made a similar version before. I need to find it and post it because they sure were a hit.
