Double Duty Dip

Serve this hot as a dip with pita chips, toasted baguette slices or Mini rye toast.
OR Put a large star tip on your piping bag and pipe it into hollowed out Cherry Tomatoes then broil for 3 minutes to heat. Top with fresh chopped chives.

True Boursin is a "triple-cream" (75% fat) cheese from France. It is traditionally flavored with herbs or cracked peppercorns. Boursin tends to be quite expensive in the United States.

This homemade version is an easy way to make an inexpensive replica of an expensive food. Close your eyes and you will be hard-pressed to tell the difference.
