We live on a "big blue marble" so much larger than our neighborhood/city/state/country/

I'm making my Stuffed Green Chiles tonite. I'm going to take notes this time when I make so I can get it posted. I don't measure much so getting things into recipe form can take me a while sometimes. lol... I will be pouring my own sauce that I canned on it.

When I visited New Mexico several years ago,we had the best chili rellenos,they were stuffed with vegetables and cheese. I'm also looking for the rellenos that aren't real eggy and fluffy,I would prefer a more crispy relleno. Any recipes out there? I don't remember what kind of veggies but I would think corn,onions,Mexican squash or zucchini.
I recently got married to a wonderful mexican man and I am hoping to be able to learn to cook him some authentic tasting Mexican food. LOL I can cook, don't get me wrong, but some things I just want to learn to cook just like they make it in his home.

I am in love witg green chili pork... especially when it's so tender that it falls apart, and it's scooped onto a fresh warm tortilla smothered in spicy refried beans mmmm! I posted my version of a dish at my favorite restaurant and it did it in a stock pot one time, and then I did it in a crock-pot so I could leave it alone. The Best Green Chile Pork... Ever
