Guiltless Treats

I love desserts. But as we all know, they are neither good for our health nor weight. It would be great to have more recipes like the one for my Guiltless Beetroot Cupcakes in my recipe box. Does anyone have recipes for yummy guiltless treats to share? Please do!!!

Sweet Potatoes

If you enjoy foods that contrast sweet and sour, this recipe is for you. It is full of color, textures, and flavors AND IT IS EASY!

3 large sweet potatoes (cubed)
1 cup raisins
1/4 balsamic vinegar
1/4 goat cheese (crumbled)
1 tsp. rosemary
1 tbl butter (melted)

1. Place sweet potatoes in a baking dish. Pour melted butter over.
2. Bake at 425 degrees for 30 minutes.
3. While the sweet potatoes are cooking, place raisins and balasmic vinegar in a saute pan on medium heat. Cook for 10 minutes or until raisings have soaked up most of the balsamic vinegar.
4. Once the potatoes are done, put into a large bowl and allow to cool for 10 minutes.
5. Mix together the sweet potatoes, raisins, goat cheese, and rosemary.
6. Serve!

So, I tried polenta for the first time a couple of weeks ago, and Ohhhh wow. Where has polenta been all my life. It has such great texture and a unique taste.

I am going to attempt to make it tonight for the FIRST time! Any tips on what to add to make my polenta reach its fullest potential?

Ideas for pizza?

I have been on a pizza-kick lately, and have been looking for healthy pizza alternatives. I created a homemade pizza with a store bought wheat pizza crust, tomatoes, Gorgonzola cheese, mushrooms, and sauteed onions. It turned out alright, but I am still searching for a more creative, inexpensive, delicious pizza recipe.

Any ideas?

Left-over soup

Last week I made a Hungarian mushroom soup that I accidentally added too much red pepper to which caused it to be too spicy for my taste. I tried to eat as much as possible, but just couldn't handle the heat. I didn't want to waste the rest because there was still about 3 bowls worth.

So a couple of nights ago I bought chicken and was trying to think of a new marinade. BINGO! I poured the left-over soup in a zip lock bag and added 4 chicken breasts. I marinaded the chicken over-night. It came out delicious! Anytime I have left-over soup I will make sure to turn it into a marinade :)

Turning rice into a nutritional meal...and quick too! (spin off Indonesian rice)

1 bag of wild rice (90 second microwavable rice)
1/2 yellow onion chopped
1/2 a package of tofu, cubed (optional)
1/2 cup of plain yogurt
1/2 cup of milk
1 tsp paprika
1 tsp ginger (ground)
1 tsp parsley
1 tbl oil
salt & pepper to taste

*Saute tofu and onions in oil.
*Add paprika, salt and pepper
*While the tofu and onions cooking, heat rice and put into a large bowl
*Let the rice cool down a little, then add milk, yogurt, ginger, and parsley.
*Then add tofu and onions
*Mix and serve!

Serves about 2 people

Butter for Toast

I just shared this with another group, that instead of using any kind of butter on toast, I use Vegetable Cooking Spray. I simply spray the bread, then put my oven on Low broil, and voila'. Toast that's not dry and contains no sodium and no calories!!
