My sister's friend and co worker told us about a Philipino restaurant. We went to the restaurant and I fell in love with several dishes there. I had a drink called calamansi,it was so good ! I left the restaurant and went straight to a nursery and ordered a calamansi tree. That was over 5 years ago. The tree is doing great! I harvest several times a year. I make a drink like lemonade. I make my lemon bar recipe but add calamansi to it, it is divine! I find when I just add calamansi the flavor is weak ,but if I add a bit of lemon,the flavor if the calamansi comes thru.
One day I was watching a gardening show and they mentioned calamansi was a ornamental tree because their were so many seeds in the fruit. Yes,there are alot of seeds but the flavor is so good,there's no way it should be just just for ornamental use. It does takes some work to juice them,but it's well worth it. The scent alone is wonderful!
I have found frozen calamansi juice at Philipino stores,that's delicious too.
Sadly,the restaurant closed,so I''m always on the look out for good Philipino recipes,I'll post the ones I have.
I could eat my way thru a plate the size of my state(FL) but i need a good (authentic) recipe and im not even sure if they originate in the phillipines. Im guessing due to the fact my father was stationed there and i get my infatuation with them from him.lol
