Hello and let's Cook!

This is my kind of group! Love my Grill!

Hi all I'm Dave,

I'm originally from New Orleans and grew up cooking with my grandmother since age 6 or so. I've learned from several great Cajun/Creole and Southern Chefs. I also have been a chef on oil rigs in the Gulf of Mexico.

I'm most known for my Cajun/Creole dishes like Shrimp Creole, Shrimp & Crawfish Etouffee, Gumbo's, soups and other seafood dishes. Love to grill great steaks and BBQ ribs.

I'll be putting my recipes here over the next few weeks. I hope you enjoy them as much as mys family, friends and I do!

Grilled Octopus

Tried my hand at grilling a octopus, it was a lot of fun and tasted incredible.
Put toghether ahead of time you can quickly grill and serve the octopus as a
appetizer while you main cooks out on the grill.

Good smoking day.....

WE had the smoker going all day yesterday (Saturday) and smoked a ham shank, a brisket, and something I've never bought before, brisket pork ribs. Everything came out great, still on the fence about those ribs though. Made a new potato salad and used it in my potato salad deviled eggs and made some sinfully fattening and delicious baked beans. Today it's raining a little and I couldn't be more grateful.
