A Taste of North Africa

I was asked to start a group that focuses on North African Cuisine. I hope to show the folks here how easy and flavorful this cuisine can be and excite some tastebuds. I have been cooking North African and Moroccan for a while now and I don't know anyone that hates it. There are a lot of people that are afraid to try it because of the unusual spices but once they do they will usually come back for seconds. This cuisine includes lamb, chicken, goat, beef and fish as well as a lot of vegetables. It is a fusion of all the different peoples who have conqured the area over the years. If you have vegetarian friends this type of cooking will lend itself easily to satisfying them too. Have fun with this and feel free to experiment but if you do be sure to post here as to how it came out, good or bad.

I am so happy

I can not believe I have finally found a cooking site that is actually active. I can't tell you how many sites I have been on that just have nothing going on. Thanks for accepting me. I have a lot to give and I hope you all enjoy it.

What you will need for spices

Don't be afraid of the number of spices this kind of cooking requires. Once you have made some of the basic spice mixtures you will have them around for a while. Here is a list of the basic spices you will need. In other posts I will describe how to make the most popular mixtures.

Fenugreek
Paprika
Ground Ginger
Onion Powder
Cardimom
Corriander
Nutmeg
Garlic Powder
Caraway Seeds
Cloves
Cinnamon
Allspice
Savory
Mint
Cumin
Mace
Turmeric
Anise
Black Pepper
White Pepper
Sea Salt
Rose Pedals
Of all these the rose pedals may be the hardest to find but if you do not have well stocked speciality store around you might be able to buy some from a resturaunt.
