This is a group, where we can share different diabetic recipes.
Myself,I don't have diabetes...
But it runs in my family...
My mother,sister,brother,aunts, uncles and cousins all have diabetes.
I'm sure you might have a family member or friend that has diabetes.
I'm starting this group to help people learn to make their own goodies,
Because you know the stuff in the stores are terrible.
I have tried several times to make a high protein, lower carb bread. It tastes fine but it doesn't work in my bread machine, so I tried it by hand. The first rise was fine. The loaves rose up just fine too but when I baked it they dropped to 2 1/2" tall, which was the problem I had in the machine.
I have added Vital Wheat Gluten to it to help. Any ideas? I'm a carb hound and I am pre-diabetic, so I'm told. Any ideas? I've been a "from scratch" bread baker for years, but this has me stumped.
I loved the Furr's Cafeteria pie (way back when we had a Furr's....they have been gone from this area for years), after I became a diabetic I revamped a lot of recipes so I could have "just a little" of them while everyone else devoured the whole pie.

I have a recipe for apple walnut cookies that I have had for years and make fairly often (especially in fall). But don't often try to change regular recipes because my husband almost always notices and it spoils it for him (I am diabetic). But this recipe which I will post another time was easy to change w/o changing taste or consistency. I was thrilled because I could have 2 or 3 for a snack and they didn't change my glucose levels. So there is hope for us. Joanne
