Whole wheat pastry flour

Does anyone know how to make whole wheat pastry flour using whole wheat flour? Thanks

    It's not really possible to turn regular whole wheat flour into pastry flour, because they are made of different kinds of wheat.
    Bread flour is made of a hard red wheat that is high in gluten, and pastry flour of a soft white wheat with a lower gluten content. All purpose flour bought in the store is usually a mixture of the two different types of wheat.
    However, recipes can be adjusted so your whole wheat flour makes good pie crust or cookies. Some of the tips above should help you with that.

    I belong to a food co-op where I can buy whole wheat pastry flour, and it performs well. I think Arrowhead Mills also makes a commercial brand of whole wheat pastry flour you can find at major grocers.

    Thanks for the info but I can not find whole wheat pastry flour where I live that is why I was hoping to make some....
