Casseroles that freeze well

Our town holds a fundraiser each year, for the local food pantry. They sell casserols that freeze well, for individuals to purchase before the holidays. We live in the deep south and love good old down home cooking. any ideas?

you could make the bacon wrapped chicken, with the can of golden mushroom soup, add a little milk to it and have a good cassrole.

My chow mein recipe freezes well and this recipe serves 25, so you'd have plenty to donate! :) I would put a couple scoops of rice in a container and ladle the chowmein over top put a lid on and freeze...put a note to serve with chow mein noodles and soy sauce... Chicken and Pork Chow Mein

While not necessarily in the category of casseroles, soups tend to freeze well and you could always add pasta to them to make them a casserole.

Chicken Tetrazzini makes 2 large roaster pans full or you could find smaller pans 5x7 with cardboard insert lids,for 2-4 people and it will make tons.

I have just discovered that the Cracker Barrel Hashbrown Casserole found on this site freezes wonderfully, just need to stir when thawed before putting into the oven (I've been freezing it pre-cooked, though it freezes just as well after cooking as well.)

My tamale casserole freezes real well. It's just a layer of diced onions, a large can of tamales with the paper off, crushed chili Fritos, a large can of chili without beans and a top layer of shredded cheese. Bake at 350 til the cheese is all bubbly. This is really good and filling.
