How long do they last

How long would you say they last (before going stale)? Do they need to be refrigerated?

Whoopie Pies are basically two cake rounds sandwiching frosting. They will last a couple of days if wrapped individually. When I get them from Amish country in PA, I cut them into quarters and freeze 2 quarters in snack sized bags. Whenever I need something sweet, I pull one out and eat frozen. It makes a great dessert for my diet. I'm looking forward to creating a somewhat lo-cal version.

Sandi, When my kids were at home, the whoopie pies never lasted more than a day! I find the filling stays a better texture if the cookies are refrigerated. In a warm kitchen, the filling just melts. I generally make very small cookies. We have a vacuum sealer, so I put about six into a bag and pulse the sealer just enough to get enough air out that the cookies don't get freezer burn, and put the bags into the freezer. Like Debbie said, they're great frozen.
