My Protein Packed Cottage Cheese Recipes
Kim Biegacki
I love cottage cheese and eat it quite often plain in a bowl with just a pinch of sugar just like my grandpa Eugene Campbell did. This was a product that my grandparents always had in their refrigerator and so it's in mine as well. I've been searching for more recipe that call for cottage cheese and here they are. I look forward to trying these recipes and adding to our collection.

Oh, by the way, thanks so much for posting the Cottage Cheese Jello Salad. One of my faves from childhood. That's definitely on my list to make very soon!

Kim, I just came home from the store with 4 cartons of cottage cheese (it was on sale). That tells you how much I love it! So now I have enough to try some of these recipes in your cookbook--yay!

I'm so nervous about trying...I used to help my Grandma all the time baking bread when I was young. But I was just her assistant and I never knew the complete process from beginning to end. I think for Thanksgiving I shall try to make some for the first time. But in a week or two I should do a trial run. TY Bonnie! xoxoxo

I would think probably the rolls would be the easiest, if you are brand new to baking bread. All of my bread recipes are for beginners, and it makes me happy that many ladies on JAP have learned to bake with yeast from those recipes. Just follow the recipes as written, use the ingredients that are listed and don't substitute, and you won't have any problems. Later, you can venture out and tweak to your heart's content! If you have any questions, PM me. I'll be glad to help. :)

PS...another fun recipe to start on is this one:
BONNIE'S 30-MINUTE HOT DOG OR HAMBURGER BUNS

Ellen, so glad you like it. Yes, I eat my plain cottage cheese with either sugar or salt and pepper. Probably have a bowl about 4 days a week. Love cottage cheese too!

Bonnie, out of the two breads which one is easier to make. Mind you, I haven't ventured into bread making (with yeast) yet?

Thanks so much, Kim, for using two of my recipes in your fabulous new cookbook! I plan to check out each and every one of these--I love cottage cheese so much. I really think it's one of my very favorite foods. Definitely a favorite lunch, plain with salt and pepper.
